Meal Prep Taco Salad
Damn Delicious has such amazing recipes- these Turkey Taco Salads are sure to please! Individual condiment containers help keep foods separated and fresh. No soggy salads when the croutons and dressing are added at mealtime! Tip: double the meat for this recipe and freeze it for later use. This will save so much time on a Sunday night when you really don’t have time to meal prep for the week. Having a quick stash of already made foods in your freezer is a huge time and money saver after a busy weekend!
Starbucks Copycat Meal Prep
Do you have a slight Starbucks habit? Before working at home I would frequently blow my budget by stopping at the Starbucks drive through on my way to work. A coffee and lunch adds up quick! Save time and money with these copycat Starbucks Chicken and Hummus Bistro boxes. These are also great dinners because the pita and chicken are filling. If you’re a sports family these would be great for kids in the car on the way to a game, or for you to munch on as you watch from the bleachers. No more concession stand “walking tacos” when this healthy option is on hand!

Burrito Bowls
These Chicken Burrito Bowls are easy, healthy and gluten free! Taco seasoning gives the chicken a flavorful kick. while the beans provide much needed protein. (I’m going to share a secret. I am *terrible* at making rice. It never turns outs- it’s either mushy or undercooked. So I have switched to the boil-in-the-bag variety and I am not feeling guilty or looking back. It takes 10 minutes, is perfect every single time, and I can get a lot of meal prepping done in that time!)
Korean Bowls
These Korean Beef Bowls from Destination Delish certainly look delish! Change the recipe up by using ground turkey or chicken in place of beef, and make it veggie friendly with tofu. I have never tried to freeze tofu, but the ground beef, chicken or pork would freeze well for use in a later week’s meal prep. These freezer containers are a great size (and have awesome reviews) for freezing already-cooked meat for later use.
Carnitas Bowls
We are totally into bowls lately and these Pork Carnitas Bowls are the bomb! They are packed with protein and veggies, and the corn and red onion give them a sweet crunch, too! I also can never get enough Mexican street corn (elotes) and cojita cheese! Hubby does not always want the cheese, which is fine by me! I am definitely a “more is more” person when it comes to cojita cheese.
Meal Prep Pinwheels
These Turkey Spinach Pinwheels have been a hit with the whole family! Make a bunch- these are great snacks, too! The pinwheels are super easy to make and you can use any type of lunch meat that is on sale. We like to take these out on our boat for an easy lunch that we can pick at as we float in the sun.
