Meal Prep Cauliflower Cashew Bowls
These Cauliflower Cashew Lunch Bowls are easy to meal prep in advance, super healthy and vegetarian, too! I can eat these all day, whereas my husband likes a little meat in his meal. Meatless Mondays are not going to kill him, though! I love roasted cauliflower- this dish is great right out of the fridge when you’re not in the mood for a hot dish, too.
Beef Lo Mein
This Beef Lo Mein with Broccoli is ready in less than 30 minutes! Make it on Sunday with extras for the week. Dare I say this is quicker than Chinese take out?? I think it might be. If you don’t have a wok, you may want to consider one like this. It is traditional hammered steel, which gets ***hot*** to perfectly sear meats. This wok is multi-functional, as well. It can also be used as a deep fryer, and the handle is removable so the pan itself can be used in the oven as a roaster.
Sheet Pan Salmon
Cafe Delites shows us how to make these delicious Sheet Pan Chili Lime Salmon Filets for meal prep. Add some rice and you have a great meal! This is a nice recipe because you can easily add veggies that you like, or change them up from time to time. Extra lime wedges give it a little more flavor after you reheat it, too. If you don’t have a nice sheet pan, these are fantastic. They are very well made and don’t “buckle” in the heat of the oven. They are super easy to clean (and dishwasher friendly!!) too. We use them all the time- they are great for making no-mess bacon!
Update: I made these last week and they were AWESOME. Definitely a must-make recipe. This salmon is so good I shared the recipe with my mom and kids!
