Can you believe that for as slowwwwly as January went by, Valentine’s Day is next week? And that means February will be half way over! Maybe a speedy February is our reward for surviving January… Anyway, Valentine’s Day is next week! Do you have plans to stay in? If you do, that’s awesome! I love a low key evening in with my sweetheart, especially when a thoughtful dinner is part of it. We are staying in and going out this year, which is kind of different. Most of the time we stay in or go out, but never both.
There is a new-ish distillery in our area that is only open Thursday through Sunday, so while we were with our friends this past weekend we thought it would be fun to check it out on Valentine’s Day! But they don’t have food, and it’s a weeknight, so arranging dinner for a group before heading over to the distillery is a bit much. We’ll have dinner at home and then meet up with our friends. Best of both worlds! Now I just need to figure out what to make for dinner.
I could ask my husband, but I’ll get an “I don’t care” or a “whatever you want” and that just won’t work. đŸ˜‰
Of course, as usual, Pinterest has me covered! Let’s take a look at some recipes that are perfect for a special evening in, Valentine’s Day, a dinner party with good friends and any other day that calls for a something a little extra.
Rosemary & Garlic Roast Beef
How amazing does this roast beef from Olivia’s Cuisine look? OMG. I am so hungry- now may not be the best time to be working on this post, lol! Especially when we’re having not-so-exciting leftovers tonight… Anyway- I am adding this to my list now because my husband would devour this alongside some garlic mashed potatoes and asparagus or roasted Brussels sprouts. This is perfect for an evening in with a bottle of good red wine, some crusty bread and quiet conversation.
Pasta with Palomino Sauce
This is actually my recipe for palomino sauce and it is SO GOOD. It is by far our favorite way to “dress up” store bought pasta sauce. It’s easy and everyone here loves it. It’s kind of a pink color, so it’s great for Valentine’s Day, too. Add Italian sausage or meatballs if your sweetie is a carnivore.
Salmon Wellington
We love salmon and I usually make it at least twice a month. This salmon wellington from 31 Daily looks amazing! Mushrooms, spinach and dill add great flavor and who doesn’t love anything wrapped in puff pastry?
Beef Tenderloin with Cognac Sauce
Beef tenderloin is always a treat at our house. We usually have it for Christmas, along with crab legs, and it is so tender and delicious. Valentine’s Day definitely calls for a special occasion dinner and this beef tenderloin from the Striped Spatula is perfect. It can be paired with your favorite vegetables and potatoes for an amazing meal you’ll both love.
Seared Scallops with Bacon & Lemon Butter Sauce
These seared scallops from Julia’s Album look fantastic! This would be so good served over pasta. Plus, bacon is the definition of love, right?
Stuffed Chicken with Goat Cheese and Caramelized Onions
When I see recipes like this they really make me wish my husband liked goat cheese! It’s one of my favorites and I wish I was able to cook with it more often. This Chicken with Goat Cheese and Caramelized Onion from A Dish of Daily Life looks so good! And it combines three of my favorite things: breaded chicken, caramelized onions & goat cheese. Like the tenderloin, just about any of your favorite veggies and potatoes would work perfectly with this dish.
Bacon, Dried Cherry & Caramelized Onion Stuffed Pork Tenderloin
Pork tenderloin is one of my favorite foods to make for dinner parties. It’s inexpensive, can be prepared 101 ways and is always excellent. This pork tenderloin stuffed with bacon & dried cherries from the Frugal Hausfrau looks so tasty!
Beef Ragu
I know I recommend this recipe all. the. time. But I have a question for you: have you made it yet?!! It’s seriously amazing. I have been making this beef ragu from Pinch of Yum once a month or so. The beef ragu is made in the crockpot, so this is a great recipe for a weeknight Valentine’s Day dinner. You’re going to LOVE this recipe. I bet it becomes one of your favorites!
Shrimp & Bacon Pasta
Not gonna lie, I love pasta. I think I could eat pasta with a nice, crusty bread and a glass of wine every single night. This pasta with shrimp and bacon from Salt and Lavender looks terrific!
Panko Crusted Chicken Piccata
What I love most about doing these roundups is finding all of these recipes I can’t wait to make! This panko crusted chicken piccata from Neighbor Food is going on my “to make” list asap. This looks amazing, and from the recipe it is easy enough to make on a weeknight.
