Wild Rice Soup with Ham, Bacon & Almonds
Creamy wild rice soup that is sure to hit the spot on a cold winter’s day!

  1. Melt butter in a large stockpot.
  2. Add onion and sauté until translucent. Add garlic and sauté. Add carrot and sauté a couple minutes to soften a bit.
  3. Once the onion, garlic & carrots have sautéed a bit, add the flour. Stir with a wooden spoon to combine. Cook for 2-3 minutes into a white roux.
  4. Add chicken broth and bring to a boil. Reduce heat to simmer. Cook, stirring frequently, until thickened.
  5. Add cream and stir, returning to simmer.
  6. Add bacon, ham, cooked wild rice & almonds.
  7. Let simmer for 10 minutes.
  8. Serve hot. Refrigerate up to 3 days, or freeze leftovers for another night.
