Sweet and Easy Strawberry Muffins with Streusel Crumb Topping
Fresh strawberry muffins with a sweet streusel topping- so easy to make! You can’t eat just one!

  1. 1. Pre-heat oven to 350 F convection, or 375 F standard. 2. Line muffin pan, or thoroughly grease muffin cavities. 3. ***The first 8 ingredients are for the muffins. The last 4 ingredients are for the streusel topping.*** 4. For the muffins: 5. Cream the butter and sugar. 6. Add the vanilla, egg, baking powder and salt. 7. Add the flour and mix thoroughly. 8. Gently fold strawberries into batter. 9. Spoon into muffin pan.
  2. 1. For the streusel: 2. Mix cold, diced butter with brown sugar, sugar and flour until crumbly. 3. Sprinkle over tops of unbaked muffins.
  3. For convection ovens: Bake at 350 F for 15-18 minutes, until a toothpick inserted in the center comes out clean. For standard ovens: Bake at 375 F for 17-20 minutes, until a toothpick inserted in the center comes out clean. Let cool and enjoy!
