A few weeks ago our softball friends came to the lake for a weekend of fun in the sun. Do you have groups of friends you label? We have softball, volleyball, old neighborhood friends, friends from volunteering…I do like to compartmentalize everything, you know. Anyway, my girlfriend makes this amazing salsa and lucky for us, she brought some to share the weekend she was here. We practically devoured it on night one, and I knew right away that I would have to try it once sweet corn season arrived. Well, sweet corn season is here and when this past weekend’s round of friends and family came to visit, I decided to try my hand at making my friend’s recipe. It is SO EASY! I don’t know what I was waiting for- it is the perfect summer appetizer and takes less than 10 minutes to make.
The main ingredients are simple: corn, black beans, feta, green onion.
Notice the missing green onions? Yeah. I forgot them until we started eating it and my daughter was like “this tastes different than Maureen’s.” So I quickly chopped the green onion and stirred it in, but I had already taken all of the pictures. The second thing to notice is that wild ear of corn that is 1/2 light green and 1/2 dark green! Isn’t that crazy?
The ingredients are as follows:
1/4 C apple cider vinegar
1/4 C sugar
1/4 C olive oil
15 oz. black beans, rinsed and drained
5 ears of fresh corn (or two 15 oz cans of corn, rinsed and drained)
8 oz feta
5 green onions
- Remove the corn from the cob.
- Rinse and drain the black beans (and corn, if using canned corn.)
- Crumble Feta cheese.
- Chop green onions.
- Mix the top four ingredients in a bowl with the apple cider vinegar, sugar and olive oil.
- Refrigerate for 2+ hours.
After you’ve refrigerated the salsa, give it a good stir before serving. (The green onions would have given it some nice color, lol!)
For as easy as it is, you will not believe how good it is! I think it took me longer to peel the corn than it did to assemble the salsa. And, the best part is everyone will love it! It is delicious with tortilla chips and Fritos scoops.
I have developed a real thing for pineapples this year and keep picking up pineapple-themed stuff! I love my yard sale find summer platter, but this one is way cuter! Anyone want to trade? 😉
