Easy Shepherd’s Pie with Mashed Potatoes Recipe
This shepherd’s pie is topped with creamy mashed potatoes and shredded cheese making it a classic comfort food perfect for any night of the year and great for potlucks!

  1. Bring a pot of water to boil for making mashed potatoes.
  2. Chop the carrots and onions and saute in olive oil on the stovetop.
  3. Once the carrots & onions have softened, sprinkle with flour and stir to absorb excess oil.
  4. Add ground beef to the pan with the carrots & onion and cook until cooked through. (Add potatoes to the water to make mashed potatoes.)
  5. Once the beef is done, scoop it into the bottom of a deep dish pie plate or an 8×8″ glass baking dish.
  6. Top the beef with corn. (If using frozen corn, heat it through so it’s warm/hot going on top of the beef.)
  7. Once the potatoes are mashed layer them over the beef and corn. (I add about 3 tablespoons of shredded cheese to the potatoes.)
  8. Top with remaining cheddar cheese.
  9. Bake at 350f for 15-20 minutes until the cheese melts and the sides begin to bubble.
