These chicken rice bowls will give Chipotle a run for their money! Perfect for dinner or a week of lunches, these bowls are delicious!
The salsa reminds me of the “Texas Caviar” recipes – sooooooo good! You could easily add the rinsed beans to the salsa mixture, too, to skip a step.
This recipe is served at room temperature (if eating it immediately) or cold. If you are using it for lunches, the flavors will continue to blend each day. Absolutely delicious. You will not be disappointed!
Tips for maximizing the juice and flavor from lemons & limes:
1. Use a lemon reamer. If you do not have one, this is a nice one. Many options are wood, but since I put everything in the dishwasher, wood is not a great option.
2. To remove the zest (or fragments of the outer skin of the fruit), use a zesting tool. The sharper, the better. This is similar to the one I have.
3. Finally, heat your lemon or lime in your microwave, 15 seconds at a time, until it is “squeezy.” This will allow you to squeeze almost all possible juices from the fruit. It will almost double the amount of juice you would get out of a lemon or lime that has been in the refrigerator.
